Cellooctaose is an oligosaccharide, consisting of eight glucose residues. Cellooctaose is a low-costpolysaccharidesin fermentation to hold onLactococcus lactisrecombinant strain growth. Cellooctaose is the substrate of beta-glucosidase (E.C. 3.2.1.21)^[1][2].

Cellooctaose can provide a growth platform forLactococcus lactisrecombinant strain, which constitutively secretes a β-glucosidase and an endoglucanase, and be metabolized into L-Lactic acid (LA)^[1].
Cellooctaose, can be generated from further hydrolyzed cellodextrins (cellotriose to cellooctaose) by β-glucosidase (0.19 μg/mL) to give glucose by sequentially splitting off glucose molecules from the oligomeric substrates and intermediates^[2].
