背景信息：
胃饥饿素（也称食欲调节激素）是一种属于胃动素家族的神经肽激素。它是生长激素促分泌素受体 1 型 (GHS-R) 的配体，在下丘脑腹内侧核和弓状核细胞中表达 (1)。胃饥饿素由胃肠道中的胃饥饿素合成细胞合成为一种前激素原；溶蛋白性裂解生成一种含 28 个氨基酸的肽激素，它经受酶胃饥饿素 O-乙酰转移酶 (GOAT) 在丝氨酸 3 位点进行的必需 n-辛酰化 (2)。N-辛酰化胃饥饿素结合 GHS-R 会刺激生长激素释放，同时产生多种神经内分泌效果，会影响食欲、胃运动和能量平衡 (3)。
