CC -!- FUNCTION: Bacteriocin with a broad antibacterial spectrum against
CC various Gram positive, Gram negative food borne and multidrug resistant
CC pathogens, and against some fungal pathogenic strains (Ref.1, Ref.2).
CC Displays bacteriocidal activity against L.monocytogenes ATCC 7644
CC (MIC=80 ug/ml), and inhibits the growth of M.luteus KIBGE-IB20 (MIC=160
CC ug/ml), P.aeruginosa ATCC 27,853 (MIC=80 ug/ml), S.aureus KIBGE-IB23
CC (MIC=160 ug/ml), B.cereus ATCC 11,778 (MIC=80 ug/ml), E.coli ATCC 8739
CC (MIC=80 ug/ml), E.faecalis ATCC 29,212 (MIC=40 ug/ml), A.terreus KIBGE-
CC IB-35 (MIC=40 ug/ml) and A.flavus KIBGE-IB34 (MIC=20 ug/ml) (Ref.2).
CC Has no activity against B.licheniformis KIBGE-IB3, A.niger KIBGE-IB-36
CC and A.fumigatus KIBGE-IB33 (Ref.2). {ECO:0000269|Ref.1,
CC ECO:0000269|Ref.2}.
CC -!- BIOPHYSICOCHEMICAL PROPERTIES:
CC pH dependence:
CC Optimum pH is 6.5 (Ref.1, Ref.2). Retains 70% of its antibacterial
CC activity at pH 8.0 and pH 5.5 (Ref.2). {ECO:0000269|Ref.1,
CC ECO:0000269|Ref.2};
CC Temperature dependence:
CC Optimum temperature is 35 degrees Celsius (Ref.1, Ref.2). Highly
CC thermostable (Ref.2). Retains 60% of its antibacterial activity after
CC heating to 100 degrees Celsius for 3 hrs (Ref.2). Stable during
CC storage at -10 degrees Celsius and loses no activity during storage
CC for 6 months (Ref.2). {ECO:0000269|Ref.1, ECO:0000269|Ref.2};
CC -!- DEVELOPMENTAL STAGE: Highest expression in the early stationary growth
CC phase, with expression decreasing after the end of the stationary
CC phase. {ECO:0000269|Ref.2}.
